Is there a way to configure membase to only listen on a specific interface or do I need to block unwanted access with firewall rules?

There is no way current way to bind Membase to only one instance unfortunately, it listens on all by default.
You'll want to control any unwanted access with a firewall as you seem to have already realized.
I'm adding this to our list of enhancement requests and will pass it to our product management.
