our company has enterprise license and installed enterprise version and uses it.
if we don't extend enterprise license more,
do we have to uninstall current enterprise version and re-install community version again?

When you purchase an enterprise license you purchase to use a given amount of machines (dedicated or vm). If you are using more machines than you purchased then you are in violation of your contract. Typically when our customers start using more machines than they have purchased they simply call us as soon as possible to let us know and we update the contract.
