Bucket Reload Takes Hours - solve with additional nodes?
Hi,
If my server reboots my data bucket takes about 3 hours to reload which isn't scalable for my system. Would having an additional node help this issue?

It doesn't appear this issue is going to get fixed any time soon (it's been just under two years).
If I had two servers and one went down but the other one didn't, would that mean my bucket would still be accessible from that single server? This might be solution but I'd need to know before purchasing another server.

If you have two servers and one goes down then you will only be able to access half of your items. Once you failover the downed server you will be able to access all of the items. We have made some improvements to this issue for Couchbase 2.0, but we have not yet gotten to the point where your server can start up in a matter of minutes as is stated in the bug you are referring to. If you are going to purchase a node then I recommend that you contact our support team since they will be able to respond to you quicker than on the forums and will help you resolve any other issues you might have.
Having more servers should help here since you will be spreading out the loading process over multiple machines. Also, this is an issue we are actively working on. You can follow it here:
