Is there any benefits in choosing the 64 bit membase version compared to the 32 bit? I have learned today that the 64 bit debian distro I'm deploying is using more RAM than the 32 bit debian version.

As a best practice we would recommend the 64-bit version if you can. It allows you to address much more RAM in a system. While the 32-bit should work fine, it should only be used on 32-bit systems.
