After creating a clean install of membase beta 2, I can only access port 11211 using the local loopback interface (localhost).

patojutard, it sounds like you might have a firewall in place, can you check the status of the iptables service?

I've the same problem.
Read http://www.couchbase.org/wiki/display/membase/Using+Membase+in+the+Cloud and followed the steps for Linux.
Confirmed:

netstat -tap | grep 11211
(Not all processes could be identified, non-owned process info
will not be shown, you would have to be root to see it all.)
tcp 0 0 localhost:11211 *:* LISTEN -
tcp6 0 0 [::]:11211 [::]:* LISTEN -

Using Ubuntu LTS 10.04 with Membase 1.7.1 in VMWARE from a MAC Host
The VM has its own IP address in a bridged connection

Added IP:
-name ns_1@10.100.65.25

10.100.65.25 confirmed with ifconfig

Arf, can you explain the problem you're having a bit more in detail? The original post here is quite outdated both in description and software version...
